Blueberry Vanilla Scones Recipe
- 1 cup vanilla yogurt
- 3 cups all-purpose flour
- 1/3 cup granulated sugar
- 2 tablespoons baking powder
Preheat oven to 350 degrees.
Cover dried blueberries with warm water and let stand 5 to 8 minutes.
Drain and use as directed.
Mix together flour, sugar, baking powder, and baking soda in a bowl. Add butter and blend with a fork or pastry cutter until it resembles coarse oatmeal. Add the vanilla yogurt and blueberries and mix gently to create dough.
Turn dough onto a lightly floured board and divide in half. Pat each half into a circle about 6"-7" in diameter. Cut each circle into eight wedges, and place on a parchment lined cookie sheet, rearranging wedges into the original circles.
Bake scones for 12-15 minutes. Cool and serve as desired.
